The Meat Lab

There is a meat science department at Tarleton, but I have never visited it, despite being interested in finding out what they do in there. The first thing I noticed is how clean everything is in the laboratory. Not like the soils lab!

It is always good to learn what other scientists do. Sometimes I think scientists in different fields do not respect each other enough. It was cool to see the way different attributes of meat, like tenderness and moisture, are quantified. After all, if you can’t measure it, it’s not science!
